Traditional cooking methods can destroy 20–40% of an ingredient's nutrients, whereas sous-vide preserves these nutrients by sealing them in. It also retains the moisture of the ingredients, so you get something that's a lot closer to homemade dog food, and it's also going to be richer in flavor because of the way it's cooked.
